Tarahina is one of 47 endemic plants to Rekohu (Chatham Islands). Scientists originally thought tarahina to be extinct, until it was found growing there in abundance. Harvested by some of the world’s only disease-free bees, Go Wild tarahina honey is one of the rarest honeys in the world. And once Go Wild founders Kaai and Francesca get their hands on this liquid gold, they freeze-dry it.

What gives freeze-dried honey the wow factor? As its moisture content is vaporised and vacuumed off, what’s left are meringue-like chunks of candyfloss fragility with an unrivalled purity and intensity of flavour – not to mention space-age weightlessness – that has found favour with high-end chefs, tourists and locals alike.
