Recipe: Heavenly Chocolate & Coconut Raw Slice
A decadent no-bake slice to pair with a cup of tea.

If you love coconut and chocolate, this treat is for you. I am a sucker for this flavour combination. This slice is decadently rich and gorgeous with a warm cup of tea.
Preparation: 15 minutes
Cooking time: 10 minutes
1 cup dried dates
1 cup raw cashew nuts
1 cup shredded coconut
2 tablespoons cacao
Pinch of sea salt
½ teaspoon vanilla extract 2 tablespoons coconut oil
2½ cups desiccated coconut
²⁄3 cup coconut oil, melted
¼ cup honey, melted
½ teaspoon vanilla extract
1½ cups water
1 cup dried dates
2 tablespoons raw cacao
¹⁄2 cup coconut oil, melted
¼ teaspoon salt
Line a square baking dish (approximately 20cm square) with baking paper. Place the dry ingredients for the base in a food processor and whizz until they are finely chopped. Add the vanilla and coconut oil and combine until the mixture is sticky. Press the mixture into the base of the baking pan and place in the fridge while you make the coconut layer.
To make the coconut middle layer, in a large bowl, combine the desiccated coconut, coconut oil, honey and vanilla. Pour the wet coconut mixture onto the chocolate base and place back in the fridge.
To make the topping, place the water and dates in a saucepan on the stove top. Bring to the boil and simmer for 10 minutes or until the dates soften. Drain the dates and place them in the food processor; whizz until very smooth. Allow to cool for a little while. Add the cacao, coconut oil and salt. Whizz until combined and very smooth. Remove the slice from the fridge and smooth the chocolate topping over the coconut centre.
Place in the fridge and allow to set for 1 hour. Cut into 16 squares and keep in the fridge until you serve. This slice will keep for over a week.
