Recipe: Jammy Pear Cocktail
This rum-based cocktail is made with fresh pair, maple syrup and a cinnamon stick.

½ pear, peeled, core removed, finely diced
1 cinnamon stick
1 tbsp maple syrup
1 tbsp water
45ml spiced rum
200ml cider of your choice
¼ orange, skin on and cut into wedges
Place pear, cinnamon, maple syrup and water in a small saucepan. Cook over a medium heat until the pear is soft and the liquid has reduced. Remove cinnamon stick and mash pear to a jammy texture.
Fill a tall glass with ice. Add the run, top up with cider and stir. Add 2 tbsp pear jam, and the juice from the orange wedges. Drop wedges into the glass and serve.
