Recipe: Nicola Kawana’s Tomato and Horopito Chutney


Kiwi actor Nicola Kawana is also a talented gardener. She shares her favourite chutney recipe, perfect for using up a tomato glut. The horopito is optional, but it adds an extra kick to the chutney.

Recipe  Nicola Kawana

INGREDIENTS

1 kg of tomatoes, skins on, chopped
3 large red onions, halved and sliced
4 cm piece of ginger, chopped
5 garlic cloves, chopped
8 cardamom pods, whole
1 cup of brown sugar
150ml apple cider vinegar
1 fat red chilli, pierced
6 horopito leaves, if available
1 heaped tsp smoked paprika

METHOD

Bring all the ingredients to a boil in a large non-stick pan, then reduce to a simmer for an hour or two, depending on how much time you have. Remove the chilli from the mixture, then turn the heat up and reduce until thick and sticky. Bottle in sterilized jars.
