What is a spritzer? Basically, it’s a beverage containing either sparkling water or wine. In this case, both.

It’s usually low in alcohol and a refreshing drink to sip on a hot summer’s day, but we drink this one now because it’s grapefruit season.

INGREDIENTS

150ml Aperol
60ml elderflower cordial
2 grapefruit
750ml sparkling wine
120ml soda water

METHOD

Half fill a large jug with ice. Add Aperol, cordial, and the juice of one grapefruit.

Pour in the sparkling wine and soda water and stir.

Peel the remaining grapefruit carefully with a sharp knife, removing all pith with the skin. Cut into segments along the pith lines and add to the jug.

Serve over ice.
