Recipe: Caralee Fontenele’s Banana Bread in a Mug

You know when you are at home after dinner and you just feel like a little something sweet, but you want it to be quick and easy? This is the perfect dessert for that occasion! You can whip these up in no time at all, and they are really delicious.

Preparation 7 minutes
Cooking time 2 minutes
Serves 4

INGREDIENTS

1 ripe banana
½ cup coconut milk
3 eggs
4 tablespoons maple syrup
2 tablespoons coconut oil
¼ cup coconut flour
½ teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon nutmeg

To serve:
Maple syrup
Fresh banana

METHOD

Prepare 4 shallow mugs or ramekins by greasing them with coconut oil. Mash the banana in a large bowl, add remaining wet ingredients and whisk together. Fold in the coconut flour, baking soda, cinnamon and nutmeg.

Pour the batter into the mugs or ramekins and place in the microwave for 1½ to 2 minutes. Serve with a drizzle of maple syrup and fresh bananas.
