Recipe: Kiwi Red Quinoa & Chickpea Salad


A wholesome salad that combines good-for-you greens with nutty quinoa and a zesty dressing, perfect with roasted game.

Kiwi Quinoa Kiwi Red Wholegrain Quinoa is a 2023 Farro Earth Category gold medal winner.

Serves: 4, as a side

INGREDIENTS

1/2 cup Kiwi Red Quinoa
4 cups of baby spinach/kale mix
1 cup green grapes, halved
400g can chickpeas, drained
¼ cup chopped almonds

For the dressing:
¼ cup rice wine vinegar
juice and zest of one lime
3 tablespoons tahini
2 tablespoons tamari
1 tablespoon sesame oil
1 small chilli (finely diced)
2 teaspoons grated ginger
1 garlic clove, crushed

METHOD

Rinse the quinoa and add to a saucepan with 2 cups of boiling water.

Cover and simmer for approximately 20 minutes or until the tails of the quinoa release. Drain well and allow to cool.

Make the dressing by whisking together all the ingredients in a bowl or jar. Combine the salad greens, grapes, chickpeas and cooked quinoa. Pour over the dressing and sprinkle with the almonds.
