Recipe: Kohlrabi, Fennel & Apple Slaw with Lemon Maple Dressing

A fresh matchstick salad made with raw kohlrabi, apple and fennel.

Serves: 4
Time: 10 minutes


2 medium kohlrabi bulbs
1 large fennel bulb
1 large apple

1 tsp maple syrup
zest of 1 lemon
3 tbsp lemon juice
3 tbsp olive oil
½ tsp salt


Peel the fibrous outer skin from the kohlrabi bulbs. Slice into matchsticks.

Core the apple and slice it the same way. Thinly slice the fennel bulb. Save a few of the fennel fronds to garnish.

In a small jar, combine the dressing ingredients, seal the jar with a lid, and shake well. Combine the vegetables in a bowl and toss with the dressing.
