Recipe: Persimmon Salad


Pomegranate seeds, sliced persimmon and goat cheese take this salad to the next level.

Serves: 4
Preparation: 10 minutes

INGREDIENTS

3 persimmons, peeled, sliced
½ red onion, thinly sliced
6 handfuls baby spinach, or mixed greens
Seeds from 1 pomegranate (optional)
½ cup goat cheese, crumbled

Dressing:
1 tablespoon Dijon mustard
¼ cup olive oil
1 tablespoon honey
3 tablespoons white wine vinegar
¼ teaspoon salt
¼ teaspoon pepper
½ teaspoon cumin

METHOD

In a medium bowl combine the salad ingredients. In a small jar or glass combine the dressing ingredients and mix well. Pour dressing over the salad and mix well.
