Recipe: Spiced roast potatoes and cauliflower
This is a simple roast potato and cauliflower dish with a Goan twist.
2 large potatoes, cut in 5cm cubes
1/2 a cauliflower, cut into large florets
2 tablespoons olive oil
2 teaspoons Jen’s Cozinha Goan Masala Spice Blend
salt, to taste
fresh coriander, for garnishing
Heat the oven to 180ºC. Put the potatoes and cauliflower in a large bowl. Combine the spice blend and olive oil, then pour over the vegetables.
Transfer the potatoes to a roasting dish and cook for 25-30 minutes, until nearly done.
Add the cauliflower and roast for another 5-10 minutes, until it’s golden brown and slightly crisp on the outside. Garnish with fresh coriander.
Serve with your favourite roast meats or with a curry and rice. Serves 4
