Recipe: Celia’s Ciabatta

INGREDIENTS

yeast
water
flour (high grade)
sugar
salt

METHOD

Day One:

Mix (make the dough in the bread maker using the following ingredients and leave overnight to ferment).
1½ teaspoon yeast
1½ cups water
2¼ cups flour (high grade)

Day Two:

Set dough cycle again and add to the first mix 3 teaspoons yeast, 3 cups flour, 3 teaspoons sugar, 1½ teaspoons salt and 1 cup of water.

The dough will be very wet. Form it into four long thin loaves using plenty of flour. Brush with olive oil and sprinkle with flour.

Bake for 25 minutes or until golden brown at 200°C fan bake.
