Recipe: Honeyed Gin Sours


Serve this sophisticated but simple drink as an aperitif or refreshing cocktail.

The egg whites are optional, but they give the drink its fluffy head.

INGREDIENTS

⅓ cup honey mixed with
2 tablespoons boiling water
1 cup freshly squeezed lemon juice
1 cup good-quality gin
2 egg whites (optional)
2 generous handfuls ice

INGREDIENTS

Put all the ingredients in a cocktail shaker and add ice. Shake until well blended and frothy, then strain into six small glasses. Serve immediately.

Serves 6
