Recipe: Honey Roasted Kūmara with Chilli Flakes and Sour Cream


Grant Allen shares his roast kūmara recipe, which is topped with dollops of a sour cream dressing.

INGREDIENTS

6 medium red kūmara, washed but not peeled
3 tablespoons honey
4 tablespoons oil
Salt and pepper
200g sour cream
1 lemon or orange, juiced
1 tablespoon dried chilli flakes

METHOD

Cut kūmara into 3cm chunks. Place in a roasting dish and toss through honey and oil. Season with salt and pepper.

Roast in a lidded barbecue until tender – about 20 minutes with the heat at 180°C. In a small bowl, combine sour cream, citrus juice and chilli flakes.

To serve, pile kūmara into a dish and top with dollops of the sour cream dressing. Serves 8 as a side.
